Sirloin steak with bone (2 lbs.)
Freshly round salt and pepper
Let the steak stand at room temperature before cooking it.
Salt it and place on a red hot broiler, without flame, grilling it until well browned on each side.
The steak should by charred on the outside but rare on the inside.
A sprinkle of olive oil or lemon can be added and then finish off with freshly ground pepper.
A green salad or white beans make a great side dish.
